Vegan Oatmeal Raisin Scones
Protein Lean Power Food Scones
These scones combine healthy carbohydrates and protein. Flax seed provides fat burning omega-3's. They're free of known allergens, inflammatory foods and animal products. They're wheat, soy and gluten free, dairy free, contain no refined "white" sugars and are suitable for vegans and vegetarians.
This recipe makes 10 to 12 Oatmeal Raisin Scones.
Mix all the dry ingredients together in a bowl:
1/4 cup Arrowroot flour
1/4 cup Finely ground flax seed (use whole flax seed and grind in your coffee grinder)
1 cup All purpose soy free, gluten free flour
1/2 cup Gluten free oatmeal
1 tsp Baking Powder
3 scoops Protein Lean Power Food - Vanilla Cream flavor
Mix all the wet ingredients together in a bowl:
1 cup Unsweetened apple sauce
1 tbsp Vanilla extract
4 tbsp Liquified coconut oil
1 cup Raisins
2 tbsp Agave
Preheat oven to 400 degrees.
Add the dry ingredients to the wet ingredients and mix thoroughly.
Use a heaping tablespoon to drop the scone mixture on to a parchment covered (or oiled) baking sheet.
Bake for 15 to 18 minutes.
Cool on a wire baking rack.
Power Food scones are delicious warm or at room temperature. Enjoy them with your favorite fruit juice sweetened jams for breakfast.
