Vegan Protein Lean Power Food Puddings

This recipe uses Protein Lean Power Food. It’s simple, quick and easy to make. Rick has always given the same response when asked “are you a good cook?”  He replies “yes, as long as it can be made in a blender.”  Protein Lean Vanilla Cream and Chocolate Bar Puddings fit Rick’s requirements for cooking and are a great alternative to drinking down the required amount of protein to sustain a healthy and fit lifestyle. 

Our pudding is crazy good, vegan and healthy. Each serving will supply you with over 13 grams of quality protein along with essential omega-3’s plus additional fiber from flax seed. Serve the pudding for breakfast, as a snack or dessert for adults or kids. 

While on the 14-Day Anti-Aging Detox, enjoy it as a late night, “feels like you’re binging” dessert. When we get the urge to cheat, we make Protein Lean puddings.

The Vanilla Cream Pudding and the Chocolate Bar Pudding ingredients are slightly different, but the mixing and preparation directions are the identical. You can use a handmixer or a blender. All of the ingredients are easily found at your local market or health food store.

Measurement note: 1 scoop of Protein Lean equals approximately 1/4 cup.

Vanilla Cream - Pudding Ingredients

1 1/2 cups   Protein Lean Power Food - Vanilla Cream flavor (or 6 scoops)
1 tbsp     Finely ground flax seed   (use whole flax and grind in a coffee grinder)
2 tsp Arrowroot flour 
2 cups Unsweetened coconut milk 
1 tsp Vanilla extract
Optional Coconut crystals or monk fruit to taste. If you want it sweeter.

Chocolate Bar - Banana Pudding Ingredients

1 1/2 cups   Protein Lean Power Food - Chocolate Bar Flavor (or 6 scoops)
1 tbsp Finely ground flax seed  (use whole flax and grind in a coffee grinder)
2 tsp Arrowroot flour 
2 cups Unsweetened coconut milk 
1/2 Banana (as an option if using blender only) 
Optional  Coconut crystals or monk fruit to taste. If you want it sweeter.

Directions for Both Puddings
1.   Pour all of the liquid ingredients together in a bowl or blender.
2.   Add all other ingredients into bowl or blender.
3.   Set handmixer or blender on low for 1 minute, then on high speed until smooth / creamy.
4.   Use a spatula to make sure all ingredients are incorporated.
5.   Pour the mixture into 8 small bowls (about 2oz each). 
6.   Chill a minimum of 1 hour or until set.

Be Creative
Protein Lean Power Food Puddings tastes best chilled. We love it with fresh fruit or berries and an interesting presentation gives us “visual feasting”. So have fun with your serving “bowls”. Use a martini glass, you’re aunt’s old china, your assortment of Fiesta ware bowls or traditional French ceramic ramekins.
